1Wash and shred the potatoes and green peppers, set aside.
2Heat oil in a clean pot, add chopped potato shreds and green pepper shreds, stir fry evenly.
3Add salt, Anji chicken essence, white sugar, and Anji chili powder, and continue to stir fry for 2-3 minutes.
4Add vinegar and continue to stir fry evenly.
